Betty's Banana Pudding

6 large ripe bananas
1 can evaporated milk
1 can hot water
1 1/4 cup sugar
3 tablespoons cornstarch
3 eggs
1/4 stick butter
1 teaspoon vanilla

In top of a double boiler, add can milk and water. Start letting it get hot. In a medium size bowl add sugar, to this add cornstarch, mix well. In a separate bowl beat the eggs, add it to the dry mixture, mix it well. (this method should prevent any lumping)

Slowly add to the milk & water in the double boiler....stir until it thickens.

Remove from fire, add butter and vanilla.

Layer bottom of bowl with vanilla wafers, slice bananas on top. Then pour 1/2 of the pudding mix over this. Alternate with bananas until pudding is gone. (you can substitute canned chunk pineapple for the bananas. Don't forget to drain well) This is very good!!!
