Mexican Casserole

1 lb. lean ground beef
1 can Rotel with green chilies (chopped finely) (whole tomatoes)
1 can Cream of Mushroom soup
1/4 cup onion chopped finely
1 cup grated cheddar cheese
Crushed corn chips
Brown hamburger meat and onions.
Drain fat
Heat (microwave) Rotel & Cream of Mushroom soup (mixed) until warm
Take a 2 qt. Pyrex bowl (spray with Pam)
Layer with enough crushed corn chips to cover bottom of dish.
Put 1/2 of the meat
Put 1/2 of the Rotel mixture
Put 1/2 of the cheese
Repeat the last 3 steps. (No chips)
Put rest of the meat
Put rest of the Rotel mixture
Put rest of the cheese
Bake uncovered until cheese is lightly brown (30 - 40 min) @ 350°
Serve over rice. Great!

Coconut-Caramel Pies

1/4 c. butter or margarine
1 (7 oz.) pkg. flaked coconut
1/2 c. chopped pecans
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1 (16 oz.) frozen whipped topping, thawed
2 baked 9-in deep dish pastry shells
1 (12 oz.) jar caramel ice cream topping
Melt butter in a large skillet. Add coconut and chopped pecans; cook until
golden brown, stirring frequently. Set the mixture aside.
Combine cream cheese and sweetened condensed milk; beat until smooth. Fold in
whipped topping.
Layer 1/4 of cream cheese mixture in each pastry shell. Drizzle 1/4 of caramel
topping on each pie. Sprinkle 1/4 of coconut mixture evenly over each pie.
Repeat layers with remaining ingredients; cover and freeze until firm.
Let frozen pies stand at room temperature 5 minutes before slicing.
Yield: 2 9-inch pies

Hot Kocoa

NesQuic Chocolate (30 oz.
box)
1 box powdered sugar (16 oz.)
10 oz. powdered milk (about 5 cups)
CoffeeMate Creamer (about 16 oz.)
Mix all ingredients well...
Add 2-3 heaping tablespoons to a cup or mug of hot water.
Stir well & Enjoy!
Optional: top with marshmallows or whipped cream

Hot Spiced Tea

1 3/4 cups Tang
1 1/4 cups instant tea
1 1/2 sugar
1 pkg. lemon kool-aid
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
10-12 oz. pkg. red hots
Put red hots in blender, handful at a time. Beat to a powder. Mix all
ingredients well in a large bowl. Add 2-3 level teaspoons to a cup or mug of
hot water. Stir well and Enjoy!
Optional: instant tea w/lemon or Crystal Light instead of lemon Kool-Aid.

Cream Cheese Log

3 or 4 8oz. pkg. cream cheese
(softened)
2 pkg. (dry) Italian Seasoning mix
course ground black pepper
Blend cream cheese and seasoning mix well...use fingers or spoon. Chill in
refrigerator for several hours or overnight (too gooey to work with if you
don't chill it). Use wax paper to form logs or balls (makes 3 or 4). Unwrap
and sprinkle/cover with black pepper. Store in saran wrap or wax paper in
refrigerator until needed. Great with club crackers or Triscuits!

Angelfood
& Strawberry dessert

1 Angelfood cake
1 16 oz. tub Coolwhip
1 can Eaglebrand milk
1-2 lb. containers of strawberries
1 9 x 13 pan
Cut Angelfood cake into 1/2 inch squares (electric knife works great)
Mix Coolwhip and Eaglebrand milk together
Cut strawberries into slices
Place Angelfood squares into 9 x 13 pan
Cover with Coolwhip mixture
Cover with strawberry slices
Chill in refrigerator

Popcorn

Pop 2 bags movie butter popcorn -
spread onto open newspaper. Melt 4 squares of almond bark in double
boiler. Put popcorn in grocery sack and pour melted almond bark over it.
SHAKE, SHAKE, SHAKE! Pour onto waxed paper, let cool and dry. Eat
and enjoy!

Pralines

1c whip cream
1lb box of brown sugar
Cook in large bowl for 14 minutes
in microwave
Add 1 stick of butter
1-2 c pecan
Drop on wax paper
Great microwave pralines!

Ground Beef, Corn and Tomato Pie

Meat and Poultry:
Ground Beef, Corn and Tomato Pie
INGREDIENTS:
2 tablespoons olive oil
1 clove garlic, minced
1 onion, chopped
1 pound ground beef
2 cups canned tomatoes
2 cups canned corn
4 tablespoons butter
5 tablespoons flour
1 teaspoon brown sugar
1/2 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon paprika
Pie crust, biscuits or slices of buttered bread
TO PREPARE:
Put oil, sauté garlic, onion; brown ground meat. Add tomatoes and corn.
Melt butter; stir in flour. Add ingredients to meat mixture; stir until
boiling. Season with sugar, chili powder, salt and paprika. Place
in a greased, oven-proof dish. Top with crust or slices of buttered
bread. Place in a hot oven (425°) until the top is done, about 20
minutes.

Mexican Cornbread Casserole

13 x 9 x 2 baking pan or dish
1 1/2 lbs (92%) fat free hamburger meat
1 large onion (chopped)
Cook hamburger & onion until onion is clear and hamburger gray
Mix 3 packages of cornbread mix, as directed on package
Pour half of the mixture into (sprayed) pan
Spread hamburger & onion on top of 1st layer of cornbread
3 cans of green chiles
1 can of Rotel tomatoes
2 cans of cream style corn
1 1/2 lbs of Velveta (Mexican Medium Cheese) over corn
Pour remaining cornbread mixture over cheese
Bake in heated 345° oven for 1 hr. or until bubbles to the top. Should be
golden brown and set.
Note:
This recipe fills the baking
dish to the brim! Might try 1 lb. of Velveta to keep from overflowing
and trashing oven!

Oat Muffins

1 cup old-fashioned oats
1 cup buttermilk
1 large egg, beaten
1/2 cup (1 stick) butter, melted
1 cup flour
1/2 teaspoon cinnamon
1/2 cup firmly packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 teaspoons plum jam
6 teaspoons apricot jam
TO PREPARE:
In a medium bowl, combine
oats and buttermilk, let stand for 2 minutes.
Stir in egg and melted butter. In
small bowl, combine flour, cinnamon, brown sugar, baking powder, baking soda
and salt. Add to oat mixture and
stir until just combined.
Preheat oven to 350 degrees. Pour batter into greased muffin tins, top each with 1
teaspoon jam (alternate between plum and apricot).
Bake until a toothpick inserted into the centers comes out clean, about
18 minutes. Cool slightly and
serve.
NOTE:
Any fruit jam works well. Baked as mini muffins, served with cold milk
or hot cocoa. MAKES

Meat Loaf

1 envelope Lipton Onion soup mix
1/2 cup salsa
1 1/2 pounds ground beef
1/2 cup of motza meal (fine cracker crumbs)
1 egg
Preheat oven to 350
Optional - (1/4 cup of salsa for topping)
In medium bowl, combine Lipton Onion dry soup
mix with all ingredients - mix very well! Shape into loaf and place in baking
pan. Make an indention the length of loaf, add 1/4 cup of salsa to top. Bake
45 minutes or until done, serve over a bed of rice.
Makes 4 to 6 servings.

Coconut Pie

1 stick of oleo (melt & cool)
2 1/2 cups sugar - with 1/2 cup of flour mixed together
1 1/2 cups milk
3 eggs
1 tsp. vanilla
pinch of salt
2 cups coconut
Add mixture to two unbaked pie shells cook for
one hour at 350 degrees! (you won't stop eating this one)

Banana Pudding

6 large ripe bananas
1 can evaporated milk
1 can hot water
1 1/4 cup sugar
3 tablespoons cornstarch
3 eggs
1/4 stick butter
1 teaspoon vanilla
In top of a double boiler, add can milk and water.
Start letting it get hot. In
a medium size bowl add sugar, to this add cornstarch, mix well. In
a separate bowl beat the eggs, add it to the dry mixture, mix it well.
(this method should prevent any lumping)
Slowly add to the milk & water in the double
boiler....stir until it thickens.
Remove from fire, add butter and vanilla.
Layer bottom of bowl with vanilla wafers, slice bananas
on top. Then pour 1/2 of the
pudding mix over this. Alternate with bananas until pudding
is gone. (you can substitute canned chunk pineapple for the bananas.
Don't forget to drain well) This is very good!!!

Buttermilk Pancakes

Preheat griddle to 375
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
Mix the above ingredients by hand
Add the ingredients below 1 at a time. Blend
thoroughly by hand.
1 cup buttermilk
1 egg
2 tablespoons vegetable oil
Makes 2 servings. I've used this recipe on my
waffle iron and made two large waffles! I will say that they are
mighty tasty!

Microwave Peanut Brittle

1 cup sugar
1/2 cup Karo Syrup
1 1/2 cup peanuts, raw
1/8 t salt
1 T butter
1 t baking soda
1 t vanilla
Mix all in a bowl and microwave on high for 4 minutes.
Take out and stir well.
Microwave for 4 more minutes.
Take out and add 1T butter and 1t vanilla.
Stir this in and microwave 2 more minutes.
Remove and add 1t baking soda and stir very quickly.
Pour into a buttered pan.

Kay's Apple Dumplings

2 cans crescent rolls
3 Granny Smith's apples (peel, slice & microwave 2-3 minutes)
Unwrap crescent rolls into triangles (roll from wide end first)
Wrap 3-4 slices of apples in crescent roll & place in 9x13 pan sprayed
with Pam
Melt:
2 sticks of butter or margarine
1 3/4 C sugar
1 t vanilla
1/2 t cinnamon
Pour over crescents.
Pour 8-10 oz of Mountain Dew over crescents.
Bake for 30 min @ 350
Makes 16 wonderful desserts!

Kay's Chicken Casserole

Mix together:
2-3 C cooked chicken
8 oz sour cream
1 can cream of mushroom
1 can cream of chicken soup
1 can Rotel tomatoes
Spray Pam in 9x13 pan
Layer flour tortillas and soup mixture
Layer flour tortillas and soup mixture again
Add grated cheese on top
Bake for 30 min @ 350
I use the big burrito size
tortillas. Tear the tortillas to cover bottom of the pan and second
layer.
Jim's "Fish Bites"

1/2 Cup flour
1/4 Cup cornstarch
2 Cup yellow cornmeal
1 beaten egg
2 t olive oil
1 t (or to taste) freshly ground pepper
Corn oil or lard for deep frying
4-5 pounds fish, cut into bite-sized bits (skinned, filleted catfish, bass,
crappie, perch). Mix dry ingredients, then stir in beaten egg. Dip fish bits
into cold water or milk then roll the fillets in breading mixture. Fry in
hot oil in a black iron skillet. Once they are golden brown or float, they
are cooked. Serve hot.
Note: Adding a little olive oil to
the cornmeal (or any batter) adds crispness to the coating of fried fish.

Honey Bun Cake
Ingredients:
1 Box Yellow Cake Mix
¾ Cup Oil
4 Eggs
1 Cup Buttermilk
Mix and pour into 9 x 13 pan (Important to use this size pan)
1 Cup Brown Sugar
2 t Cinnamon
½ Cup Pecans
Mix and swirl into cake mixture
Cook @ 300 degrees 30 to 40 minutes
1 Cup Powdered Sugar
2 T Milk
1 t Vanilla
Mix and pour over cake after baking
